Chef Patrick Senn and his team have taken advantage of this time to refresh the menu while still keeping popular classics. The breakfast menu now starts an hour earlier at 7:30 am on the first floor of the Sprüngli building. One highlight is the “Crispy Egg,” a panko-crusted egg with a runny yolk center served with creamy potato mousseline, pureed peas, pickled radishes, and a dollop of salmon roe. For those with a sweet tooth, the “Smashed Croissant” is a delightful option with vanilla cream, berry compote, and caramelized almonds on a flattened croissant, beautifully arranged for a picture-perfect breakfast.

For lunch, the “Apéro-Bites” offer a selection of delicious bites, including Flûtes filled with addictive flavors like beet horseradish, Roquefort with quince, and truffle-madeira. Another standout is the breaded chicken praline with celery cream and poultry jus. The lunch menu also features a classic favorite, Pastetli with Brätkügeli, a homemade pastry filled with veal, pistachios, apricots, and a Port wine aspic. The dish is served with Cumberland sauce and Waldorf salad, adding a perfect balance of flavors.

Vegetarians can enjoy the cauliflower in tempura batter with sesame seeds on a bed of Venere rice with a tamarind mango sauce. Meat lovers can indulge in the Blätterteig-Pastetli with Brätchügeli in a creamy sauce with mushrooms and seasonal vegetables. The lobster roll with homemade brioche is a new addition to the all-day menu, featuring perfectly cooked lobster meat, lime mayo, salmon roe, pea shoots, pickled onions, and Salicorne.
